Banquet Captain I

Visualize managing all the special details for a guests' dream wedding being held at Brookfield Zoo. Cocktails and hors d'oeuvres in one pavilion filled with elegant wedding decorations and colorful fresh flowers followed by an exquisite plated dinner prepared by our world-class culinary team in another pavilion and ending with ballroom dancing in yet another pavilion. It truly is an exotic venue where guests may visit amazing animals from around the world or simply stroll through our beautifully landscaped grounds. Our top-notch catering and culinary team offer the highest quality of service to our guests for various events from weddings, birthday parties, business meetings, black-tie events, fundraisers, ceremonies, picnics and countless others.

The Banquet Captain I oversees banquet and scheduled events staff, execution of Catered Events, as well as manages all logistics, including site arrangements in support of CZS revenue, sustainability, and extraordinary guest experience goals. The Banquet Captain I ensures all set up, details, staffing levels and execution are met to standards as well as oversees that proper care is taken in respect to all china, glass, silver, and tableware, as well as set-up props, linen, and any other additional support items.

You will make use of your prior supervisory experience managing Banquet staff responsible for start-to-finish coordination of all details, logistics, entertainment, catering, site arrangements, etc., to ensure overall success of their respective operation. This includes overseeing financial aspects of operation, including staffing and beverage costs as well the planning, directing, controlling and evaluating of departmental activities. Managing assigned staff is including but not limited to: job assignments, coaching, training and development, to assure success in functional area of expertise and proficiency at coordinating flawless events. As you oversee all scheduled events, you will meet with Banquet staff prior to event to ensure all details are arranged, review Banquet Event Orders (BEO) with Banquet Staff and Chef to coordinate projects and ensure success, and work closely with Catered Events Sales Managers to maximize efficient and cost-effective use of space. You will establish and reinforce first class service procedures, set-up procedures, and departmental operating standard procedures as well as maintaining operational coordination standards with other departments, good working relationships with all CZS departments and keep management informed of all emergent issues within the Catered Events Department.

Position Requirements and Specifications
As Brookfield Zoo is open 365 days a year and events are scheduled during mornings, evenings, holidays, and weekends, the Banquet Captain I position requires flexible availability to work non-standard hours.Catered Events employees may be scheduled to start as early as 6:30 a.m. and work as late as 2:00 a.m. Catered Events employees may be required to work a 10-hour day or longer. Due to the driving requirement, a valid driver's license is required. This is a temporary (seasonal) position. Starting wage: $18.16 per hour.

The requirements for this position include:
  • High School graduate or equivalent (GED) required.
  • Associate's degree in Business Administration, HRM or related field, or equivalent combination of training and/or experience preferred.
  • Must be at least 21 years of age.
  • Minimum 3 years relevant experience in hotel, banquet, or special events management required.
  • 2 years supervisory experience required.
  • Strong customer service skills required.
  • Must possess demonstrated strong communication, coaching and interpersonal skills.
  • Must possess strong organizational skills.
  • Demonstrated experience successfully coordinating multiple projects and activities required.
  • Valid driver's license required. Illinois residents must possess a valid Illinois license within 90 days of hire. Valid out-of-state license required for out-of-state residents.
  • Experience and/or ability to work and interact effectively with a diverse, multicultural audience.
  • Multilingual ability, Spanish fluency a plus.
