Assistant Manager, Food Service Operations, BZ Red Hots (Seasonal)

The Assistant Manager, Food Service Operations is responsible for assuring the quality of food, safety, sanitation, the quality of service, and cleanliness of the restaurant to contribute to a quality guest experience and to the Society's overall revenue goals and objectives. This position is responsible for directing staff in the performance of their assigned duties.

Walking around Brookfield Zoo can sure work up an appetite! During our busy season, BZ Red Hots, our largest on-site restaurant, is located near the Dolphinarium and is always bustling with many guests throughout the day, but especially before and after the Dolphin show. We are proud to serve a variety of high-quality, delicious summer foods - Chicago style! In addition to serving Chicago hot dogs and Italian beef, there are a variety of yummy snack foods served at the restaurant--from nachos to hot pretzels or chips. There also is an assortment of beverages to select from that includes Miller Lite, seasonal brews, and more.

The primary responsibilities of the position include:
  • Manage, supervise, and oversee all food preparation and production areas when a General Manager or Area Manager is not present or a principle component of the restaurant while a General Manager or Area Manager is present to maintain high levels of guest satisfaction. Supervise a staff of 25-75 in the performance of assigned duties. Provide necessary feedback on staff performance and communicates about performance to management. Coordinate staffing guides and schedule for food service location in accordance with budgeted labor standards.
  • Maintain security of assigned Society equipment, assets, supplies, and general information. Responsible for ensuring established cash handling procedures are strictly followed.
  • Coach and train staff, including staff development for growth and expansion in their areas of expertise, streamline production, and cross-train staff for future growth.
  • Maintain effective communications with managers and staff to ensure timely food delivery, proper display of food, and superior quality of products and services.
  • Maintain product and staffing levels at assigned location, including ordering, checklists, and station chart completion. Complete ordering of food and operating supplies as assigned.
  • Maintain established service standards and achieve financial results, balanced with safety and sanitation requirements. Communicates with other Society departments as necessary to meet restaurant objectives.
  • Assist in the coordination with Plant & Facilities and Information Technology on the maintenance of equipment and facilities as
    needed.
  • Assist General Manager or Area Manager in daily inventory control, end-of-month inventory counts, accurate recording of transfers and waste, and insure integrity of deliveries.
  • Other related duties as assigned.


Position Requirements and Specifications
The Assistant Manager, Food Service Operations position highly prefers flexible availability to work any five days out of seven days each week. Work schedules are based on the needs of the operation and may be adjusted due to weather conditions. This
position requires the ability to work non-standard hours including evenings, holidays, and weekends.

This is a seasonal/temporary position.

The requirements for this position include the following:


  • Minimum of one year supervisory experience in a quick-service restaurant required.

  • Must be at least 21 years of age.

  • Basic computer skills in Microsoft Word and Excel required.

  • Must hold or obtain, within one year of hire, a Food Service Sanitation certificate as required by the city, county and state.

  • Experience and/or ability to work and interact effectively with a diverse, multicultural audience.

The desirable/preferred qualifications include:


  • High School graduate or (GED) equivalent preferred.

  • College coursework in relevant business, culinary, or management subjects or other relevant subject a plus.

  • Prior experience supervising 30 or more staff members a plus.

  • Data entry experience preferred.

  • Written communication skills a plus.

  • Valid driver's license preferred.

  • Multilingual ability, Spanish fluency a plus.

Additional Information: Incumbent must learn and follow Society policies, departmental procedures, and standards. Food Service employees are assigned to work restaurants, refreshment stands, mobile carts, or other outdoor sales locations (certain
positions have minimum age requirements.) Food Service employees may also be required to assist temporarily at other Guest Services locations. Incumbent must have ability to work non-standard hours including evenings, holidays, and weekends. Work
schedules are based on the needs of the operation and may be adjusted due to weather conditions.
