Line Cook, Castaway Grill at Brookfield Zoo

As Line Cook, you will initiate all actions necessary to carry out food preparation and presentation by following the prep list and as dictated by the orders received from the register. You will use your knowledge of safety and food handling guidelines to assist with all food production by preparing meats and fish, prepping sauces, grilling, frying, plating up food, etc., insuring that all food is prepared according to standard recipe and presented in a consistent manner.

The starting wage for this position is $11.75 per hour.
* Must be at least 18 years of age.
* One year experience as a line cook in a restaurant highly preferred

While enjoying our beautiful, park-like setting, Brookfield Zoo guests have ample opportunity to stop for a bite to eat at one of our many locations located throughout the Zoo. The amazing 216 acres of meticulously landscaped grounds with over 20 different animal exhibits can work up an appetite for a nourishing meal, satisfying a sweet tooth or quenching one's thirst. Castaway has a scrumptious variety of food and beverage options including some delectable vegetarian offerings that our guests enjoy.

The primary duties and responsibilities include :
  • Initiate all actions necessary to carry out food preparation and presentation by following the prep list and as dictated by the orders received from the register. You will use your knowledge of safety and food handling guidelines to assist with all food production by preparing meats and fish, prepping sauces, grilling, frying, plating up food, etc., insuring that all food is prepared according to standard recipe and presented in a consistent manner.
  • Follow established food service sanitation practices. Maintain a clean and safe work area by wiping down counters throughout the day, sweeping and mopping up spills as they occur.
  • Assist in the breakdown of all utilized areas at the end of the event and clean all equipment using proper personal protection equipment. As needed, wash dishes, pots, pans, and utensils to departmental specifications.
  • Assist in the receiving and storage of stock following the first in, first out method ("FIFO").
  • Answer guests' request for recipe explanations.
  • Other related duties as assigned.


Position Requirements and Specifications
The requirements for this position include the following:

  • Must be at least 18 years of age.

  • Knowledge of safety and food handling guidelines and procedures.

  • Strong customer service and organizational skills required.

  • Ability to work in a team environment and take direction.

  • Able to work calmly and effectively under pressure and meet strict deadlines.

  • Able to stand and work at a fast pace for entire shift.

  • Must complete food handler certification and other required training within 30 days of hire.

  • Experience and/or ability to work and interact effectively with a diverse, multicultural audience.

The desirable qualifications include:


  • High School graduate or (GED) equivalent preferred.

  • College classwork in culinary or other relevant subjects a plus.

  • Knife handling skills strongly desired.

  • Understanding of proper use and maintenance of all major kitchen equipment including grills, stoves, refrigeration, slicer, and dish machine preferred.

  • One year experience as a line cook in a restaurant highly preferred.

  • Basic computer skills a plus.

  • Multilingual ability, Spanish fluency a plus.

Additional Information: Incumbent must learn and follow Society policies, department procedures, and standards. This seasonal position requires the incumbent to work non-standard hours such as evenings, weekends, and holidays. Brookfield Zoo is open 365 days a year. Work schedules are based on the needs of the operation and may be adjusted due to weather conditions or for other reasons.
